Directions

In a bowl, add the garlic, mustard, mayonnaise, salt and pepper and mix until well combined.

Refrigerate until using.

Set your grill on high heat and lightly, grease the grill grate.

Coat the eggplant slices with the oil and sprinkle with salt and pepper evenly.

Cook the eggplant slices on the grill for about 8 minutes, flipping once in the half way through and coating with the vinegar occasionally.

Coat the bell peppers with oil and sprinkle with salt and pepper evenly.

Cook the peppers on the grill until charred completely.

Remove from the grill and immediately, place in a paper bag.

Seal the bag and keep aside for about 9-10 minutes.

Carefully, remove the skin of the peppers and then discard the seeds.

Cut each pepper into equal sized strips.

Place the bread halves in the toaster oven, cut side up and toast until golden brown.

Place the mustard mixture on both halves of the bread.

Place the eggplant slices on the bottom half of the bread, followed by the arugula, pepper strips and cheese.

Place the bottom half in the toaster oven until the cheese melts.

Remove from the toaster oven and top with the basil.

Cover with the top of bread and cut into desired sized slices.

Enjoy.
